Cheesy Zucchini and Tomato Bake

Serves: 4 Ingredients: 4 small zucchini, sliced 1 lb grape tomatoes, sliced lengthwise 1 small onion, finely chopped 3 cloves garlic, minced ¼ cup fresh basil, chopped 3 tablespoons extra virgin olive oil 8 ounces Gouda cheese, shredded ¼ cup Parmigiano Reggiano, shredded Kosher salt and ground black pepper Instructions: Preheat oven to 350°. Grease a 2-quart baking dish. In a large bowl, combine the zucchini and tomatoes; sprinkle with onion, garlic, and basil. Toss the vegetables to blend thoroughly; drizzle with the olive oil and toss again to coat the vegetables. Season with salt and pepper. Arrange in baking dish.Bake for 25 minutes. Top with cheeses and continue baking for 10 to 15 minutes until cheese is melted.
