Salpicon (Shredded Beef Salad)

Got leftover steak and not sure what to do with it? Chop it up and throw it into this easy-to-make salad. This was a favorite in our house for many years. The name comes from the Spanish word "salpicon," which means "a medley" or "hodgepodge." This flavorful and refreshing dish typically consists of diced or shredded meat, usually beef, mixed with various vegetables, herbs, and seasonings. It can be enjoyed on its own as a light and refreshing salad, or it can be used as a filling for tacos, tostadas, or even sandwiches. Here's my family version.
