Mussels Marinière
Serves 4
Ingredients:
2 lbs mussels, rinsed and beards removed
1 cup dry white wine
2 cloves garlic, minced
1 handful flat-leaf parsley, chopped
2 – 3 tbsp unsalted butter
Kosher salt, to taste
Black pepper, to taste
Directions:
Place the white wine, stock, garlic, butter, salt and pepper in a large stockpot and bring to a boil over medium-high heat. Add the mussels and cover. Cook, shaking the pan occasionally, until the mussels open (about 5 – 7 minutes) then cook for an additional minute. Remove from the heat. Evenly divide the mussels among 4 shallow soup bowls, and pour the cooking juices over all, followed by the chopped parsley. Serve immediately with lots of bread.
