With mussels as the star, the addition of white wine, stock, garlic, butter, salt, and pepper creates a medley of flavors that's both exquisite and approachable. It's a dish that showcases the beauty of simplicity while delivering depth and richness.





Mussels Marinière

Serves 4


Ingredients:

  • 2 lbs mussels, rinsed and beards removed

  • 1 cup dry white wine

  • 2 cloves garlic, minced

  • 1 handful flat-leaf parsley, chopped

  • 2 – 3 tbsp unsalted butter

  • Kosher salt, to taste

  • Black pepper, to taste


Directions:

  1. Place the white wine, stock, garlic, butter, salt and pepper in a large stockpot and bring to a boil over medium-high heat. Add the mussels and cover. Cook, shaking the pan occasionally, until the mussels open (about 5 – 7 minutes) then cook for an additional minute. Remove from the heat. Evenly divide the mussels among 4 shallow soup bowls, and pour the cooking juices over all, followed by the chopped parsley. Serve immediately with lots of bread.
