Garlic Mushrooms and Bacon

Another quick dish but a bit more involved than the Pan con Tomate. This one that can be started, held and then finished when you’re ready to serve all your tapas. Be sure to remove the bacon from the pan after frying so that it stays crispy. Mushrooms are quartered so they are a meaty bite. Serve with lots of crusty bread.


Grocery list:

1 lb smoked bacon

1½ lb cremini mushrooms (baby portabellos)

One head of garlic

1 lb unsalted butter

One onion

Kosher salt and ground black pepper
