Zucchini Boats with Italian Sausage

As we approach the end of summer the garden is overflowing with zucchini. Check out the monster zucchini baby in the video!! A surplus of zucchini leads us to want to make some festive zucchini boats with sausage and veggies. This stupid easy and delicious dish comes together pretty quickly. It’s great as a side dish, appetizer, or even as a full meal.
