Lobster Filling for Ravioli



LOBSTER FILLING FOR RAVIOLI

Enough for 1 lb of pasta

Ingredients:

  • ½ cup firmly packed freshly grated Parmigiano Reggiano

  • 1 tsp fresh lemon zest

  • 2 cloves garlic, minced

  • 8 ounces cooked lobster meat, finely chopped

  • ¾ cup whole-milk ricotta cheese (6 ounces)

  • Kosher salt and ground black pepper

 

Instructions:

Combine lemon zest with parm in a medium bowl. Add minced garlic, chopped lobster meat, 3/4 cup whole-milk ricotta cheese, and salt and pepper, to taste. Stir to combine.

Cover and refrigerate until ready to use.
