Roast Chicken with Mexican Spices

Ingredients: 4 boneless skinless chicken breasts, pounded to 1” thickness ½ cup mayo 2 tsp chili powder 1 tsp ground cumin 1 tsp smoked paprika 2 garlic cloves, minced 1 tsp dried oregano 1 tsp Tajin seasoning Kosher salt and ground black pepper Olive oil

Instructions: Preheat oven to 400. In a small bowl, combine mayonnaise with garlic and spices. Season chicken on both sides with salt and pepper. Brush chicken with mayonnaise seasoning and set aside for 10 minutes. Rub olive oil on a sheet pan and place chicken on the pan. Drizzle chicken with olive oil. Roast uncovered for 15 – 20 minutes or until an internal thermometer reads 165°.
